lambThis is one of those elegant meals that takes some time but it’s definitely worth it. This recipe shouldn’t require any additional sauce recipesĀ as all the juices get locked into the piece of meat by searing the exterior. Serve with a nice bottle wine and enjoy!

Ingredients to make Peppered Rosemary & Garlic Lamb Chops Recipe:


4 pieces of lamb chops, slowly thawed (not by microwave)
2 cloves garlic, minced
1 Tbsp fresh cracked black pepper
1 Tbsp fresh or 2 tsp dried rosemary
2 tsp coarse sea salt
1 Tbsp + 1 Tbsp extra virgin olive oil

1. Mix garlic, black pepper, sea salt, rosemary, preferably with mortar and pestle. Add olive oil and mix thoroughly.

2. Using a fork, pierce the lamb chops, especially in the top loin (larger) side. This will help the marinate work faster.

3. Brush the olive oil mixture all over the chops, including the lateral and bony sides. Marinate for about 5 minutes.

4. Heat a pan over high heat. Add the remaining olive oil when the pan is heated through. First, sear one cut side until golden, about 1.5 to 2 minutes. Then, using kitchen prongs or chopsticks, turn and sear the fatty lateral side of the tenderloin until golden. Turn again and sear the other cut side until golden. Then, sear the bony side for about a minute. Lastly, sear the tenderloin side.

5. Serve immediately, perhaps with a bottle of Bordeaux or Chateauneuf du Pape red wine?
